Vegetarian Zucchini Slice – The Perfect Picnic Pick-me-up

Baked Vegetarian Zucchini SliceIt is autumn in Melbourne, what I thought until this year was my favourite season.  This year, however, I’m craving nothing but a warm sunny day and a picnic.  Even thought the weather here isn’t conducive, this recipe for a Vegetarian Zucchini Slice sure is!  Straightforward and very tasty, this dish is fabulous served warm or cold making it the perfect addition to your picnic or family lunch.

Vegetarian Zucchini Slice

  • 375G Zucchini (grated)
  • 1 Onion (finely chopped)
  • 1/4C Creamed Corn
  • 1/4C Oil
  • 1C Cheese (grated)
  • 4 Eggs (beaten slightly)
  • 1C Self-Raising Flour
  • Preheat oven to 180C
  • Mix all ingredientsZucchini Mix
  • Pour into oiled and lined cake tin or Pyrex dishUncooked Zucchini Slice
  • Bake for approximately 1 hour or until browned and knife comes out cleanZucchini Slice
  • Leave in dish till room temperature
  • Can be served warm or coldZucchini Slice 2

    This turned out perfect and very yummy! I added extra creamed corn and also grated carrot for extra veggies and colour. Will be a regular for kids lunch box ;-). Did not last long in my household!
