Now, I know how it sounds, a cake without butter and eggs, but this is surprisingly good, extraordinarily easy to make and quick too. This little cake is the perfect addition to afternoon tea and with the speed of preparation and baking, a great option for unexpected visitors.
Coconut & Lemon Cake
- 1C Self-Raising Flour
- 1C Dessicated Coconut
- 3/4C Sugar
- 3/4C Milk/Lemon Juice mix (I used approx 1Tbsp lemon juice and the remainder milk)
- Zest of 1Lemon
- Preheat oven to 180C
- Mix all ingredients together
- Pour mixture into square baking tin/Pyrex
- Bake for 30 minutes
