Deconstructed Apple Pie – Great Presentation without the Effort

Deconstructed Apple PieWhen time isn’t on your side and appearances count this Deconstructed Apple Pie is ace!  If you are really short on time consider purchasing canned apple pie mix.  This basic idea can be applied to just about any ingredients, just let you imagination be your guide.

Deconstructed Apple Pie

  • 1 Packet Gingernut Biscuits
  • 4 Granny Smith Apples (peeled, cored and sliced thinly)
  • 1-2tsp Cinnamon (depending on taste)
  • 1-2Tbsp Sugar
  • 1tsp Lemon Juice
  • 50g Butter
  • Ice Cream (I recommend Cream Brulee Ice Cream)
  • Double Cream
  • Toffee Shards
  • To stew apples: Toss apples with sugar, cinnamon, lemon juice and butter, saute in fry pan until apples are softened.  Stir frequently.  Season to taste.  Cool completely
  • To assemble pie: Crush biscuits (cookies) pour into serving bowls (I used martini classes)
  • Add a scoop of ice cream
  • Spoon apple pie mixture on top of ice cream
  • Top with double cream or whipped cream
  • Sprinkle with cinnamon and toffee shards
