Lemon Curd – Lovely!

Lemon Curd as filling for Vanilla Cake

Lovely!  Lemon curd really can be describe in that one simple but powerful word.  A good lemon curd should be smooth, tangy and creamy all at once!  This recipe is beautiful served spread on bread or as the filling for a cake such as my Vanilla Cake.  No matter how you serve this curd you will be sure to receive compliment!

Lemon Curd

  • 1/2C Lemon Juice
  • 100G (3 1/2oz) Butter
  • 1/2C Sugar
  • 1 Egg + 3 Egg Yolks
  • Over a gentle heat melt butter with lemon juice
  • Once butter is melted whisk in  sugar and eggs. (*If your temperature is too high your eggs will start cooking when you pour them in and you will end up with an inconsistent mix)
  • Stir constantly over medium heat for 5-7 minutes or until the mix thickens slightly
  • Cool completely before serving spread on bread or as a cake filling
