Vegan Vegetable Patties

Cooked Vegan Patties

Another attempt in the kid friendly, vegetarian category.  These patties are super wholesome, jam packed with vegetables and oats. Best of all these are a great option if you are cooking with individuals with wheat intolerance or vegetarian/vegans.

  • 125G (40 oz) red lentils
  • 250G Vegetables (Cooked) *(I used 150G Pumpkin and 100G Sweet Potato)
  • 125G (4oz) Oats
  • 1 Clove Garlic (crushed)
  • 1Tbsp Tomato Paste **(Alternatively you can use home made tomato chutney or a relatively think pasta sauce)
  • 2tsp Marmite ***(for yeast and gluten free option try Vege Spread by Freedom Foods)
  • Boil lentils in 1 1/2 cups of water for approximately 20 minutes adding additional water as required (Note: mix is intended to be fairly dry)
  • Add remaining ingredients to lentil mixture and season to tasteVegan Patties Mix
  • Allow to stand for at least 10 minutes
  • Shape into pattiesVegan Patties
  • Bake in 200C (400F) oven for between 20-30 minutes or alternatively shallow fry approximately 4-5 minutes each sideCooked Vegan Patties
