Ready in a Rush – Refried Bean Patties

Uncooked Refried Bean PattiesIf you love Mexican food, this recipe will be a real winner!  Super easy and very tasty, these Refried Bean Patties are a great alternative to traditional refried beans straight from the can.  Use these patties in your tacos or simply serve as a light meal with homemade guacamole and a fresh salad.

Refried Bean Patties

  • 1 Can Refried Beans
  • 1 Egg (slightly beaten)
  • 1/2C-1C Breadcrumbs
  • 1/4C Spring Onion (finely sliced)
  • 1/4C Cheese (shredded)
  • Combine all ingredients, season to tasteRefried Bean Mix
  • Form into patties (can be frozen at this stage)
  • Fry patties in a small amount of oil until brown – approximately 5 minutesUncooked Refried Bean Patties per side *patties can be baked in a moderate oven for 20 minutes, however  frying them provides improved texture
