Brilliant Brownies!

Chocolate BrowniesThese brownies almost were not.  The lesson here should be that baking after crazy days filled with fourth graders, yard duty and staff meetings should be avoided at all costs.  Headaches and general exhaustion are not conducive to baking!

Brownies are a classic favourite, though I must be honest not, in the past at least my best talent.  Usually my brownies end up as messy piles of goo.  This recipe, however breaks the mold, a fool proof.  Even with a pounding headache!

Double-Chocolate Brownies

  • 6Tbsp Unsalted Butter
  • 170G (6oz) Chocolate (the better the quality the better the taste)
  • 1/4C Cocoa Powser
  • 3/4C Flour
  • 1/4tsp Baking Powder
  • 14tsp Salt
  • 1C Sugar
  • 2 Eggs
  • 2tsp Vanilla
  • Preheat oven to 180C (350F)
  • Line and butter a 8in square baking dish
  • Melt butter and chocolate in a double boiler over low heat. Let cool slightlyMelting Chocolate and ButterMelted Chocolate and Butter
  • Whisk together flour, cocoa, baking powder and salt in separate bowl
  • Using an electric mixer beat sugar, eggs and vanilla  on medium speed until pale, about 4 minutes
  • Add chocolate mixture, beat until combined
  • Add flour mix, beat, scraping down sides of bowl until well incorporatedBrownie Mix
  • Pour batter into prepared pan, smooth top with a rubber spatula
  • Bake until a cake tester inserted into brownies (not in centre or edge) comes out with a few crumbs but not wet – approximately 35 minutesChocoalte Brownies
  • Cool in pan for 15 minutes then turn onto wire rack and cool completely before cuttingChocolate Brownies
