French Lentil Soup – Bonne Soupe!

French Lentil SoupI love French food!  I love how they take a few simple ingredients and turn it into something amazing!  I love how butter finds its way into just about every dish!  I love it all!!!

This soup is simple to prepare using ingredients you likely have in your cupboard (that is if you like me enjoy lentils).  It may not be the most attractive soup in the world; lentils will never win any prizes for beauty, but it is tasty and it is nutritious.  In fact lentils have a higher protein content than beef; not to mention being a good source of dietary fiber.

Enough about how healthy this soup is, what is more important is that is is so very tasty!  Starting your onions off in the butter adds a great roundness to the flavour of the soup. To add an extra level of brilliance, sneak another spoonful of butter in at the end, stir through and serve.

French Lentil Soup

  • 1Tbsp Butter
  • 1Tbsp OilOnion, Carrot, Celery for French Lentil Soup
  • 1 Medium Carrot (finely diced)
  • 1 Small Onion or Large Shallot (finely diced)
  • 1 Small Stalk Celery (finely diced)
  • 2 Cloves Garlic (crushed)
  • 5 Stems Thyme
  • 3/4C Puy/French Lentils
  • 3/4C Red Lentils
  • 8C Liquid (vegetable stock and/or water)
  • Rinse lentils, set aside
  • Melt butter with oil; saute carrot, shallot/onion, celery and garlic for 5 minutes or until softened
  • Add lentils, thyme, and stock/water, and bring to a boil
  • Simmer covered for 35-45 minutes, or until lentils are tender
  • Season to taste with salt and pepperFrench Lentil Soup
