Peanut Butter Pie – A Birthday Tradition

Whenever I think about Peanut Butter Pie I can’t help think about my beautiful Valerie friend who always celebrates her birthday with one of these confectionery concoctions. Due to the fact that she is currently half way across the world and I am thus unable to lovingly prepare this pie in celebration of her birthday, I instead dedicate this post to her – Happy Birthday Valerie.

Peanut Butter Pie

  • 1 1/4C Chocolate Biscuit/Cookie (finely crushed) *I used Chocolate Ripple Biscuits
  • 1/4C Sugar
  • 1/4C Butter (melted)
  • 1pk Cream Cheese (225-250g) (softened)
  • 1C Creamy Peanut Butter
  • 1C Sugar
  • 1Tbsp Butter (softened)
  • 1tsp Vanilla
  • 1C Whipping Cream
  • Preheat oven to 190C (375F)
  • To make crust combine crushed biscuit crumbs, 1/4C sugar and 1/4C butter
  • Press into 9in pie dish
  • Bake for 10 minutes
  • Cool
  • To prepare filling: cream cream cheese, peanut butter, sugar, butter and vanilla until smooth
  • In a seprate bowl, whip cream
  • Gently fold whipped cream into peanut butter mixture
  • Spoon filling into crust
  • Cover and refrigerate
