Cheese and Onion Flan – Memories and Melt in the Mouth Magic

Cheese and Onion FlanAs with countless of my other recipes, this dish is closely linked with the happiest of memories.  I think that this close link with memories is one of my favourite parts of cooking, apart from eating of course.  My Cheese and Onion Flan really isn’t mine at all regardless of the number of times I’ve followed this recipe.  This recipe is and forever will be my mum’s.

Hope you enjoy this recipe as much as I always have!

Cheese and Onion Flan

  • 1-2 Onions (finely diced)
  • 50G (2oz) Butter
  • 2Tbsp Oil
  • 1Tbsp Flour
  • 4 Eggs
  • 3/4C Cream
  • 100G (4oz) Cheese (grated)
  • Salt, pepper, nutmeg to taste
  • Shortcrust pastry/pastry shell
  • Preheat oven to 190C (375F)
  • Lightly grease flan plan with removable base
  • Line with pastryShortcrust Pastry
  • Prick well and bake for 15 minutes
  • Meanwhile, fry onions in butter and oil over low heat, stirring occasionally until tender, but not brown (approximately 30 minutes)
  • Sprinkle with flour, mix well and cook gently for 2 minutesOnion Mixture
  • Cool slightly
  • In a separate bowl beat eggs with cream, salt, pepper and nutmeg
  • Gradually mix in onions and half cheese
  • Pour into partially baked pastry shellOnion and Cream Mixture
  • Sprinkle with rest of cheeseUnbaked Cheese and Onion Flan
  • Bake for 25-30 minutesBaked Cheese and Onion Flan
  • Remove from oven and allow to stand for 5 minutesCheese and Onion Flan
