Tropical Banana & Nut Muffins

Banana Nut MuffinsBanana related baking has been a pleasure lacking in my life since cyclone Yassi  hit Queensland, Australia and the massive rise in banana prices which resulted from the damage. With this in mind, this round of baking was a treat indeed!
Based on a recipe that my mum used to make, I have altered it slightly to increase its health content (well sort of).  Nothing involving sugar can ever really be classed as healthy, however these little muffins (which also make a great banana bread loaf) have considerably more vitamins and minerals in them than many other baking options.  With this in mind, I lcass this recipe as somewhat healthy, if only vaguely. Jam packed with fruit and nuts, this recipe also includes oats as a replacement for some flour.
Banana Nut Bread

  • 2C Flour
  • 1C Oats (ground up in food processor)
  • 2C Sugar (raw sugar provides excellent flavour)
  • 1tsp Baking Soda
  • 1tsp Salt
  • 1tsp Cinnamon
  • 1C Pecans (chopped)
  • 3 Eggs (lightly beaten)
  • 1 1/2C Vegetable Oil
  • 1 2/3 C Mashed Ripe Bananas
  • 1/3C Apple (grated)
  • 225G (1Can) Crushed Pineapple (drained)
  • 2tsp Vanilla
  • Preheat oven to 175C (350F)
  • Top make oat flour: place oats in bowl and using a food processor, mortar and pestle or stick blender pulse/beat till most of the oats have been broken down into flour like consistencyMaking Oat FlourOat Flour
  • Combine all dry ingredients

Dry Ingredients

  • In a separate bowl, combine remaining ingredientsWet Ingredients
  • Combine dry and wet ingredients, stirring only until just moistened Banana Nut Muffin Mix
  • Spoon batter into two greased and floured loaf pans or similarly prepared muffin tins (2/3 full)Banana Nut Muffins
  • Bake for approximately 30 minutes for muffins or 1hr 5minutes for loafs
  • Cook 10 minutes in pan before removing to a wire rack to cool completely Banana Nut Muffins

These muffins/loafs freeze really well and seem to be even more moist after freezing!
