Individual Baked Egg Pies

Individual Egg PieEggs are a great breakfast, packed full of protein they fill you up and keep you fuller for longer.  I recently threw together this little number when I was looking for a different way of having my eggs.  Cooking your eggs in little pastry dishes is really easy, a great option for brunch entertaining as it allows you to cook for many people all at the same time.  If preparing for entertaining consider pre-blind baking your pastry to ensure your morning is stress free.

I used a small, individual sized springform cake tin, however muffin tins would work even better

Individual Baked Egg Pies

  • Puff Pastry (approx 1/4 sheet per person)
  • 1-2 Eggs (per person)
  • Preheat oven to 200C (400F)
  • Blind bake puff pastry in chosen form (muffin tin, mini cake tin) – depends on size – approximately 15 minutes. *I used ceramic baking beads to prevent the pastry from rising
  • Crack eggs into pastry and return to the oven for a further 15-20 minutes
