Spice Up Your Life: Chai Spiced Mini Cupcakes

Chai Spiced Cupcakes with FrostingIf variety is the ‘Spice of Life’, then these little cakes will add that something extra and make your next afternoon tea or baking adventure that little bit more sweet and spicy.  These little cakes are sure to please your guests whether they be knee-high to a grasshopper (as my father used to like to describe me long ago) or those who can only claim to be young at heart.

Beautifully spiced, these little cakes are as simple to prepare as they are delicious to eat.  Whilst they are delightful as they are, they transform into something truly decedent when generously adorned with Honey Buttercream Frosting!

Chai Spiced Cupcakes

  • 1tsp Cinnamon (ground)Chai Spice Mix
  • 1tsp Ginger (ground)
  • 1/4tsp Cloves (ground)
  • 71g Butter (5tbsp)
  • 1/4C Sugar
  • 1/4C Honey
  • 2 Eggs
  • 3/4C Milk
  • 1 1/2tsp Vanilla
  • 2C Self-Raising FlourChai Spiced Cupcake Ingredients
  • 1/4tsp salt
  • Preheat oven to 180C (350F), grease or line muffin/cup cake tin
  • Mix spices together in a small bowl, set aside
  • Using an electric mixer, cream butter, sugar and honey.  Beat for 5-10 minutes until very light and fluffyButter, Sugar, HoneyCreaming Sugar, Honey, Butter
  • Add eggs one at a time, beating between additions
  • Add vanilla, mix until combined
  • Meanwhile sift together self raising flour and salt
  • Add flour and milk alternatively, until combined
  • Add spice mixture and stir till smooth
  • Spoon mixture into cupcake tinUncooked Chai Spiced Cupcakes
  • Bake for 15-20 minutes or until golden and a skewer comes out cleanBaked Chai Spiced Cupcakes
  • Allow to cool completely
  • Spread with Honey Buttercream Frosting and sprinkle with the extra spice mix
    • 1tsp Cinnamon (ground)
    • 1tsp Ginger (ground)
    • 1/4tsp Cloves (ground)
