Pumpkin Spiced Fudnies

in Spice 'Fudries'I love pumpkin, whether it be savoury (the Aussie way) or sweet (Yankee style).  With this love of all things pumpkin I could hardly pass by this recipe from Running to the Kitchen.

True to promise – it’s pumpkiny spice is perfectly paired with chocolate comes together to produce something not entirely brownie and just a little bit the texture of fudge…. a pleasant if confusing texture!

Pumpkin Spiced Brownies

  • 60g (2oz) Dark Chocolate
  • 60g (1/2 stick) Butter (unsalted)
  • 1/2C Pumpkin Puree
  • 2 EggsIngredients
  • 1  1/2tsp Vanilla
  • 1C Flour
  • 1/4C Cocoa Powder
  • 1/2C Sugar
  • 1/2tsp Cinnamon
  • 1/4tsp Ginger
  • 1/8tsp Nutmeg
  • 1/8tsp Ground Cloves
  • 1/4tsp Baking Powder
  • Preheat oven to 175C (350F) – grease and line square baking dish
  • In a bain marie melt butter an chocolate; stir till smooth
  • In a separate bowl combine pumpkin puree, eggs and vanilla; stir till smoothEggs Slightly Beaten
  • Slowly stir in slightly cooled chocolate mixtureChocolate and Egg Mixture
  • In another bowl combine the remaining ingredientsDry Ingredients
  • Add dry ingredients to batterStirring in Dry Ingredients
  • Pour into prepared baking dishPumpkin Spice Fudnies Mixture
  • Bake for 30- 50 minutes (until cooked through)
  • Allow to cool in baking dish for 15 minutesFudnies
  • Remove brownies using baking paper and allow to cool on wire rack till completely cooled
