Spiced Pear Cake

Spiced Pear CakeGrowing up in The States, cakes seemed to fit into two categories: really sweet and super sweet.  Maybe this is why I’m so interested in cakes which although sweet still allow your blood sugar to maintain a similar level despite eating one, or maybe two slices of cake.

This Spiced Pear Cake is lovely!  It is amazingly moist and possesses a beautiful, gentle flavour as a result of the combination of spices, honey and its name sake the pears.

Spiced Pear Cake

  • 22oG (8oz) Flour
  • 100G (5Tbsp) HoneySpiced Pear Cake Ingredients
  • 110G (1/2C + 2Tbsp) Brown Sugar
  • 1 Egg
  • 150ml (5oz) Milk
  • 120G (5oz) Butter
  • 1 1/2tsp Baking Powder
  • 1tsp Cinnamon
  • 1tsp Ginger
  • 1 Lemon (zested)
  • 1/2tsp Salt
  • 4 Ripe Pears (peeled and cut into chunks)
  • Preheat oven to 180C (350F)
  • Grease a cake tin
  • Cream butter and brown sugar, mixing till light and fluffySpiced Pear Cake Creamed Mixture
  • Add egg, honey, zest and milk
  • In a separate bowl sift together flour, baking powder, cinnamon, ginger and salt
  • Add flour mixture to wet mix stirring until just blended
  • Pour batter into prepared cake tin
  • Arrange pear chunks on top of cake, pressing into batter so as to be just visibleUnbaked Spice Pear Cake
  • Bake for approximately 40 minutes (my oven is slow so it took more like 80min)Baked Spiced Pear Cake
  • Cool in tin
  • Serve dusted with icing (powdered) sugarSpiced Pear Cake
