Pumpkin and Chocolate Cupcakes (Vegan)

Iced Pumpkin and Chocolate Cupcakes 2Vegan is not a word I usually associate with cakes.  In fact generally speaking it’s an association that I would run (as fast a my little legs could carry me) from.  These little cakes however are gently spiced and moist.  Truly if you didn’t know their ‘dirty little secret’ you would never suspect them.

Vegan Pumpkin and Chocolate Cupcakes

  • 1/4C Applesauce
  • 1Tbsp Vegetable OilIngredients Vegan Pumpkin and Chocolate Cupcakes
  • 1/3C Cocoa Powder
  • 1/3 + 2tsp Water (boiling; divided)
  • 1C Pumpkin Puree
  • 3/4C Sugar
  • 1tsp Vanilla
  • 1 1/2C Flour
  • 1tsp Cinnamon
  • 1/2tsp Nutmeg
  • 1/4tsp Ginger
  • 1/4tsp Ground Cloves
  • 1/4tsp Allspice
  • 3/4tsp Baking Soda
  • Preheat oven to 175C (350F)
  • Mix together the applesauce, oil and cocoa powderApplesauce, oil and cocoa
  • In a separate bowl sift flour, spices, baking sodaDry Ingredients
  • Add 1/3C boiling water to chocolate mixture
  • Mix chocolate mixture quickly to create a smooth sauce like consistency
  • Add sugar, vanilla and pumpkin to chocolate batterSugar, vanilla and pumpkin mixture
  • Add half of dry ingredient mixture, mixing only until combinedFlour Added to Mixture
  • Add 1tsp of boiling water
  • Add remainder of dry ingredients, mix
  • Add remaining 1tsp boiling water, stir until all is incorporatedPumpkin and Chocolate Cupcake Mixture
  • Spoon batter into greased or lined cupcake tins, filling 3/4 fullUnbaked Pumpkin and Chocolate Cupcakes
  • Bake for 20 minutes or until skewer inserted comes out cleanBaked Pumpkin and Chocolate Cupcakes
  • Allow cakes to cool in tin for 10 minutes before removing to wire rack to cool completely
