Strawberry Cakes – Pretty in Pink

Strawberry Cupcake

Spring and the beginning of strawberry season… Heaven on Earth!  This is an especially tasty time of year to be living in Melbourne with its circling strawberry farms ensuring a tip-top supply of the delicious berry.

These ruby red berries are beautiful on their own, but I must admit I was always fascinated in the idea of strawberry+ cake too…  The result here is quite a pleasant one.

Strawberry Cakes

  • 2C SugarStrawberry Cupcake Ingredients
  • 1pk Strawberry Flavoured Gelatin
  • 1C Unsalted Butter (softened)
  • 4 Eggs (room temperature, separated)
  • 2 3/4C Sifted Flour (sift prior to measuring)
  • 2 1/2tsp Baking Powder
  • 1C Milk (room temperature)
  • 1tsp Vanilla
  • 1/2C Strawberry Puree
  • Preheat oven to 175C (350F)
  • Grease muffin tins
  • Cream sugar, butter and gelatin till light and fluffyCreamed Mixture
  • Add egg yolks one at a time
  • In a separate bowl combine flour and baking powderVanilla and Strawberry Puree
  • Add flour mixture to batter alternating with additions of milk
  • Add vanilla and strawberry puree
  • In a separate bowl beat egg whites till stiff
  • Gently fold whipped egg whites into batter
  • Pour into muffin tins
  • Bake for 15-25 minutes for cup cakes (bake for 25030 minutes in making 2x 9in cakes)
  • Cool in tray for 10 minutes
  • Turn onto wire rack to cool completely
  • Once cooled add a dollop of your favourite icing – ideally in a blushing shade of pinkStrawberry Cupcake
