Pumpkin Butter – The Ultimate Sweet Veg Spread

Pumpkin ButterI must admit that until recently I had never heard of this curious spread.  Even finding the recipe was achieved completely by accident.  It turns out, by happy accident.

Curiously, Pumpkin Butter contains no butter.  The consistency is similar to apple butter with a similar spiced, lightly sweetened flavour, Pumpkin Butter is ideal spread on toast for a ‘Holiday Season’ inspired breakfast treat.

Pumpkin Butter

  • 425G (1 15oz Can) Pumpkin PureePumpkn Butter Ingredients
  • 2/3C Brown Sugar (packed)
  • 1/4C Honey
  • 1Tbsp Lemon Juice
  • 1/4tsp Cinnamon
  • 1/8tsp Cloves (ground)
  • Combine all ingredientsPumpkin Butter Ingredients Combined
  • Bring mixture to boil over medium heatBring Pumpkin Butter to a Boil
  • Reduce heat to low
  • Cook stirring frequently for 20 -25 minutes or until thickenedThickened Pumpkin Butter
  • Store in an airtight container for up to two months.Pumpkin Butter
