Curiously, Pumpkin Butter contains no butter. The consistency is similar to apple butter with a similar spiced, lightly sweetened flavour, Pumpkin Butter is ideal spread on toast for a ‘Holiday Season’ inspired breakfast treat.
- 425G (1 15oz Can) Pumpkin Puree
- 2/3C Brown Sugar (packed)
- 1/4C Honey
- 1Tbsp Lemon Juice
- 1/4tsp Cinnamon
- 1/8tsp Cloves (ground)
- Combine all ingredients
- Bring mixture to boil over medium heat
- Reduce heat to low
- Cook stirring frequently for 20 -25 minutes or until thickened
- Store in an airtight container for up to two months.
