Gingerbread Cupcakes – Christmas in a Cupcake!

For me, gingerbread is a flavour forever connected with Christmas!  The result of a childhood filled with gingerbread men and gingerbread houses, this combination of spices is forever linked with joy and happiness!

Whilst most gingerbread recipes call for molasses, this recipe is a bit different, which was very handy since upon deciding to bake I found myself without the gooey stuff.  Regardless of the recalcitrant molasses, these cupcakes retain their gingerbready goodness courtesy of the golden syrup (cousin to molasses).

  • 90G Unsalted Butter (softened)
  • 1/2C Brown SugarGingerbread Cupcake Ingredients
  • 2Tbsp Golden Syrup (Corn Syrup)
  • 1/2C Self-Raising Flour
  • 1/2C Flour
  • 1/4tsp Baking Soda
  • 1tsp Ginger
  • 1/2tsp Cinnamon
  • 1/4tsp Nutmeg
  • 1 Egg (at room temperature)
  • 1/4C Milk (at room temperature)
  • Preheat oven to 170C (345F)
  • Cream butter, sugar and golden syrupButter, Sugar, Golden SyrupCreamed Mixture
  • In a separate bowl sift flours, soda, spices
  • Add egg to butter mixture
  • Mix in flour and milk alternativelyGingerbread Cupcake Mixture
  • Pour into prepared cupcake tinsUnbaked Gingerbread Cupcakes
  • Bake for approximately 30 minutes
  • Cool in tray for 5 minutes then transfer to wire rack to cool completely
