Banana and Oat Pancakes

Yum!  My love for breakfast treats is reinforced with these lovely flavousome pancakes!

In trying to decipher the perfect words to explains these gorgeous little golden orbs I am somewhat lost.  Truly these pancakes are something special.  The banana and yogurt keep these pancakes fluffy and light whilst the oats provide that little bit of texture that adds so much to the overall dish.

Not only do these pancakes taste fabulous, but they keep really well in their uncooked form (never got a chance to test their keepability as cooked pancakes… kept eating my research).

Banana and Oat Pancakes

  • 1C Oats (uncooked)
  • 1C Flour
  • 1/4C Brown Sugar
  • 1 1/2tsp Baking Powder
  • 1/2tsp Baking Soda
  • 1/4tsp Cinnamon
  • pinch  Salt
  • 3/4C Greek Yogurt
  • 3/4C Milk
  • 2 Eggs
  • 1/2 tsp Vanilla
  • 2 Ripe Bananas (mashed)
  • 1/4C Butter (melted)
  • Combine dry ingredients (I love using an old peanut butter container (from CostCo) to mix all my pancake/waffle ingredients.  Not only is it super easy to mix, with mess kept to a minimum, but it makes keeping any leftover mixture an absolute breeze!)Banana and Oat Pancakes - Dry Ingredients
  • Add remaining ingredients, mix to combineBanana and Oat Pancake Ingredients
  • Cook on a preheated skillet/fry pan in extra butter
  • Ladle mixture on to panCooking Banana and Oat Pancakes
  • Flip when bubble begin to form

  • Serve warm with a butter, a sprinkling of icing sugar, drizzle of honey or some fresh berry coulisBanana and Oat Pancakes with Berry Coulis
