Green Lentil Curry with Spinach

I’ve never been much into New Year’s Resolutions in the past, however, they can provide a great catalyst to achieving your goals.  As established readers of my blog will be able to attest I LOVE sweets!  My New Year’s Resolution therefore is to broaden my ‘healthier’ blogging posts.  This one is a real winner – incredibly healthy without the loss of flavour!

This recipe is jam packed with flavour and surprisingly has no butter/oil.  Serve it with brown rice and you are well on your way to keeping that New Year’s Resolution to eat healthier!  Not only is this a simple recipe to make, it tastes even better the next day as leftovers!

Green Lentil Curry with Spinach

  • 1C Green LentilsGreen Lentil Curry with Spinach Ingredients
  • 1/2tsp Ground Turmeric
  • 1 Bay Leaf
  • 250g Frozen Spinach (defrosted with excess liquid removed)
  • 1tsp Sea Salt
  • 1/2tsp Red Chili Powder
  • 2tsp Ground Cumin Seeds
  • Place lentils in a pot, cover with cold water and bring to the boil
  • Drain immediately and rinse
  • Place the blanched lentils, turmeric, bay leaf and four cups of water in a heavy-based panLentils, Bayleaf, Turmeric and Water
  • Stir, bring to a simmer
  • Reduce the heat to low, cover and cook gently for one hour, or until lentils are tender
  • Add spinach, salt, chili powder, cumin and 1/3 cup water
  • Return to simmer and cook for 30 minute further, stirring from time to timeSimmering Green Lentil Curry with Spinach
