Low Fat Apple Cake – a ‘Healthy’ Cake?

Apple CakeMy motto in a crisis, when nothing else can be done is to cook.  When one of my best friend’s father’s recently spent some time in hospital this same motivating idea came to mind.  I am under no illusions of the irony of baking a fat and sugar laden cake for someone who has just had a major heart operation, with this in mind I endeavored to bridge the chasm between health and taste.

A ‘healthy’ cake?  Simply the idea is a contradiction of terms.  This very simple and easy cake is, however, a great option if you’re looking for something not too sinful.

For those partakers not undergoing open heart surgery, home made custard or double cream is the perfect addition to this cake.

Low Fat Apple Cake

  • 1tsp Cinnamon
  • 3/4tsp Ginger
  • 1/4tsp Ground Cloves
  • 1/4tsp Nutmeg
  • 1 1/4C Whole-Meal Flour
  • 1tsp Baking Soda
  • 1/4tsp Salt
  • 2 Apples (diced)
  • 1 Egg
  • 3/4C Raw Sugar
  • 1/4C Walnuts (chopped)
  • 1/4C Applesauce (no added sugar variety if available)
  • 1/4C Brown Sugar (packed)
  • 1Tbsp Icing Sugar (powdered sugar)
  • Preheat oven to 180C (350F)
  • Prepare cake tin by greasing base and sides and lining base with baking paper
  • Make spice mix by combining first four ingredients
  • In a separate bowl combine flour, baking soda, 1 1/2tsp spice mix and salt, set aside
  • Meanwhile mix together raw sugar, apples, chopped nuts, egg and applesauce
  •  Combine wet and dry mixtures
  • Pour mixture into prepared cake tinApple Cake Mix
  • In a separate bowl, combine brown sugar, icing sugar and remaining spice mix together
  • Sprinkle mixture over the apple cakeUnbaked Apple Cake
  • Bake for 30-45 minutes or until cake is browned and a skewer inserted comes out cleanBaked Apple CakeApple Cake
