Ratatouille – Ridiculously Tasty

Ratatouille with RiceI have always loved my vegetables!  For this reason and the fact that it is packed full of flavour, ratatouille has long been a favourite of mine!

Apart from a little bit of oil in which the onion is sauteed, this recipe is pure healthiness.  Serve this ratatouille with brown rice and feel extra good about your meal!

Ratatouille

  • Red Onion
  • 3 Cloves of Garlic
  • 1 Red Capsicum (diced)
  • 1 Eggplant (diced)
  • 2 Zucchini (diced)
  • 3 Tomatoes (skin removed and diced)
  • 1 Bay Leaf
  • 2/3 Bottle Pasta Sauce (or as required)
  • 1/3C Red Lentils
  • Saute red onion in oil until translucent, add garlic and fry
  • Add eggplant, capsicum, zucchini, pasta sauce, bay leaf and lentils
  • Add extra water to ensure mixture does not stick or burn
