The Lazy Lady’s Lamington – Celebrate Australia Day The Bludging Way

Lazy Lady LamingtonsHappy Australia Day!!!  In honour of the day that celebrates the awesomeness that is Australia an Aussie inspired dish had to be on the blogging menu…  I humbly give you the Lazy Lady’s Lamingtons.

As a teacher and history lover I felt compelled to include a brief synopsis on the Lamington and it’s journey to our plate. Named after Queensland’s (state in Australia) eighth Governor, tradition dictates that the recipe was a thing of accident with the Governor’s maid-servant accidentally dropping some cake into melted chocolate and on the recommendation of her boss then tossing the chocolatey cake in coconut to protect against sticky fingers.  Whether or not the story has any truth or not, it is still one very tasty little treat!

The Lamington whilst displaying the notable variations present in any much loved recipe is based on the notion of white cake (generally sponge) covered in a chocolate/coco mixture than rolled in desiccated coconut.  Traditionally Lamingtons come in a square shape.  Some times cakes are split in half horizontally prior to dipping in chocolate and filled with a layer of either or both jam and cream (real or fake).

For me Lamingtons are forever linked with my childhood and to this day I would still argue that my mum’s Lamingtons are the best!  Whilst as I mentioned some people spread cream and or jam on their Lamingtons prior to their bath in chocolate, my preference is to have them unadulterated, allowing the eater to dollop their own cream, the crowing glory of the cake.

Why is this the Lazy Lady’s Lamington?  Instead of preparing a sheet cake, as traditionally done and then having to cut the cake into squares prior to dipping, my recipe completely removes the pesky cake cutting stage – simply pour your mixture into mini-muffin tins (or normal sized ones if you prefer) and away you go!  So, so much easier and when you make them bite-size the chocolate/cake mix is even better!

Lazy Lady’s Lamington

Cake:

  • 4 Eggs
  • 150g (5.3oz) SugarLazy Lady Lamingtons Ingredients
  • 150ml (5 oz fl) Milk
  • 60g (2oz) Butter
  • 1 1/4C (185g/ 6.5oz) Self0Raiing Flour
  • 1/4C (35g/1/2oz) Cornflour
  • 1tsp Cream of Tarter
  • 1tsp Vanilla

Lamington Coating:

  • 2C Icing Sugar (Powdered Sugar) (sifted)
  • 1/2C Cocoa Powder (sifted)
  • 1/3C Milk
  • 1/4C Hot Water
  • 3 1/2C Desiccated Coconut (unsweetened)
  • Preheat oven to 180C (375F)
  • Grease mini-muffin tin
  • Beat eggs and sugar in an electric mixer until mixture becomes thick and pale (approximately 5 minutes)Lazy Lady Lamingtons Egg and Sugar
  • In a separate bowl place milk and butter in a saucepan and gently heat over low heat until butter is melted – remove from heat and allow to cool slightlyLazy Lady Lamingtons Butter and Milk
  • In another bowl sift dry ingredients (flour, cornflour and cream of tarter)
  • Repeat sifting process a second time
  • With the electric mixer’s motor running, gradually add flour mixture to the eggs in batches, beating well after each additionLazy Lady Lamingtons with Flour
  • Add warm milk mixture and vanilla, beat to combineLazy Lady Lamingtons Adding Butter and Milk
  • Spoon mixture into prepared tins Lazy Lady Lamingtons Unbaked
  • Bake for 15 minutes or until lightly golden
  • Allow cakes to sit in tray for two minutes before removing to a wire rack to cool
    completely
  • Once cakes are completely cool (this is much quicker when preparing mini-cupcake sized/shaped Lamingtons than the traditional sheet cake) begin preparing Lamington coating mixture
  • Combine  icing sugar, cocoa, milk and hot water, whisking till combined
  • Dip Lamington cakes in chocolate mixture
  • Roll in coconut
  • Allow Lamigtons to firm up on a wire rack prior to eating (if you can control yourself!).  It is a good idea to have a tray under your wire rack for any loose coconut to drop intoLazy Lady LamingtonsLazy Lady Lamingtons Group
