Pear Pecan Salad – Summer Perfection on a Plate

Salads do not have to be boring!  This fresh and fabulous salad is the perfect example of just how sensational a salad can be!

The combination of flavours and textures adds depth and interest to this dish.  For a vegan option simply leave out the cheese.

Pear Pecan Salad

  • 3C Baby Spinach (I like to remove the stems)
  • 1 Pear (sliced)
  • 1C Red Seedless Grapes
  • 1/2C Celery (sliced)
  • 1/2C Pecans
  • 50g Camembert Cheese
  • Toss all ingredients together
  • Dress, just prior to serving

Dressing

  • 1/2C Lemon Juice
  • 1Tbsp Olive Oil
  • 2Tbsp Honey
  • Mix all ingredients and refrigerate until serving
  • Dress salad just prior to serving
