Quesadilla Casserole aka Mexican Lasagne

I miss Mexican food!  Living in Melbourne (that’s Melbourne Australia not Melbourne Florida) Mexican food is a bit hard to come by, that’s what made a present from a very special friend so wonderful!  Along with a gorgeous evening purse and beautiful bracelets, my fabulous friend also sent a McCormick Quesadilla Casserole Spice Mix Pack.

I did alter the recipe slightly, based on ingredients I had available, however the finished product is fairly true to my Mexican food memories from The States.

Quesadilla Casserole aka Mexican Lasagne

  • 1 Onion (diced)Quesadilla Casserole Ingredients
  • 1 Red Capsicum/Bell Pepper (diced)
  • 2 Green Chilies (diced) * If available use a can of chopped green chilies (undrained)
  • 500G (1lb) Mince/Ground Beef/Quorn (vegetarian mince)
  • 1can Mexican Chili Beans
  • 1 500G can Diced Tomatoes
  • 2tsp Chili Powder
  • 1tsp Ground CuminSpices Quesadilla Casserole
  • 1tsp Dried Minced Garlic
  • 1/2tsp Dried Oregano Leaves
  • 1/2tsp Crushed Red Pepper
  • 4-6 Flour Tortillas
  • 2C Shredded Cheese
  • Saute onion, capsicum and green chilies (if using fresh)Saute Onion, Capsicum, Garlic, Peppers
  • When beginning to soften add mince and brown
  • Add beans, tomatoes, spices (except for Crushed Red Pepper)
  • Bring to boil, reduce to simmer and cook for 5 minutes
  • Add red pepper if desired
  • Spread 1/2C of mixture on the bottom of the pyrex dish
  • Sprinkle with cheese
  • Place two or three tortillas on top of bean mix
  • Repeat until all mixture is used
  • Bake for 25-30 minutes
